The caramel recipe

How to make caramel is a question of recipe and respect of some instructions. It is necessary to be able to know the necessary quantities compared to the number of people concerned by the tasting of said caramel. However, in general, the essential ingredients for making liquid caramel, no matter what type of caramel, are sugar, lemon juice and water. For four people, the caramel recipe will require 125 grams of sugar or a little more, 70 cl of lemon juice and 10 cl of water. With these ingredients, how to make caramel ? In a very simple way. We start by putting water and sugar in a stainless steel pan, then stir the mixture to a boil over a low heat. As soon as the sugar is dissolved, the saucepan should be left on the heat without stirring the mixture to let it boil, before removing the pan from the heat. If the caramel has a dark appearance, it means that it is ready to harden or that it is not far from burning.

For a liquid caramel, you can add a spoonful of vinegar or lemon juice. Although dark, the caramel will serve to decorate an ice cream, to cover a mold, etc. If it's clear, the caramel is great for serving pies, cakes and fresh fruit. If it is golden, it can be used to stick the little cabbages between them and make a mounted piece. In this case, avoid putting lemon or vinegar in the preparation. You can also use caramel to make a caramel sauce with milk or cream. For people on a diet, avoid this recipe that is very caloric, but is ideal for apples and ice cream. To get it, just add cream or milk to the cooled caramel.

What to avoid

When you want to make caramel successfully, there are do's and don'ts. For example, when the pot is on fire, do not stir the mixture in an anarchic way. The good caramel is three colors depending on the use. If you want it clear, do not forget to add lemon or vinegar. On the other hand if one wants it dark, it is necessary to be all ready so that it does not burn. In any case, how to make caramel remains in principle a simple matter of attention.
